Don Bocarte Wild Bluefin Tuna Belly is fished using the traditional almadraba method, a type of sustainable fishing that takes place in Barbate (Cadiz) between May and June.
Known in Spain as atun rojo (red tuna or thunnus thynnus), wild bluefin tuna belly is highly prized for its tender, melt-in-the-mouth texture. Over time, the tuna will macerate in the olive oil and become even more tender.
