Colet-Navazos is a collaboration between cult sherry bottlers Equipo Navazos and Sergi Colet. Sergi received his Master’s degree in Champagne and gained experience at Pol Roger before returning to work with his father Josep at Colet Vins in Penedès, one of the first wineries to break away from the Cava D.O. in favor of D.O. Penedès (Clàssic Penedès).
Colet-Navazos produces sparkling wines according to the traditional method of secondary fermentation in bottle, starting with base wines sourced from Colet’s 100% organic vineyards. The secondary fermentation uses small amounts of flor yeasts and tiny amounts of sherry at the dosage stage, though in the case of this 2008 Extra Brut, no dosage was added. 100% Xarel-lo, aged 29 months on lees.
Warm days, cool nights, and a north-western exposure yield wines with balanced fruit and acidity, so although this is Extra-Brut, many people find it more approachable than non-dosage champagne.
