Roughly 54 acres of gringet are currently planted globally, 30 acres of which are farmed biodynamically by Dominique Belluard at the foothills of Mont Blanc. His vineyards are situated at an altitude of 300 - 450 meters above sea level, to allow ripening. Gringet is the grape from which “Ayse” is made. The vines grow in clay soils with broken-down limestone and the wine is made following the traditional method. Dominique uses indigenous yeasts, does not fine or filter his wines, and adds only minimal sulfur added at bottling. “Ayse” spends three years on lees before disgorgement. He also makes a Brut Zero from a single low-yielding parcel of gringet.
