La Bota de Palo Cortado “Pata de Gallina” No. 34, Equipo Navazos
Country: Spain Region: DO Jerez-Xérès-Sherry Saca of February 2012 Producer: Rey Fernando de Castilla y Almacenista Juan García Jarana, Jerez de la Frontera Limited Production: 3000 bottles 20% alc. – 75cl
Most Palo Cortados are derived from young wine originally intended for fino, but No. 34 is sourced from oxidative wines. The result is “a powerful if extremely elegant Palo Cortado…of remarkable finesse and expressiveness, with very complex nose blending aromas of Amontillado and Oloroso, plus citrus notes of orange peel."
Equipo Navazos says: "On this occasion we tasted several hundred butts of Almacenista García Jarana, most of them untouched for at least five or six years due to the slow market. We spotted a couple of dozen great butts displaying true Palo Cortado character and selected six in the end. Those were further refined for a few months 'a tocadedos' (filled up to within a hand’s reach from the top) in extraction butts at our personal Equipo Navazos storage altar within the cellars of Bodegas Rey Fernando de Castilla. The average age of this wine at time of bottling was around 25 years.”

Equipo Navazos are sherry négociants who seek out soleras of exceptional quality and distinctive personality, and specific casks from these soleras. The sherry is bottled with minimum handling to preserve their intrinsic color, flavor, and aromas – for instance, minimal filtration to remove the flor.
