“Nouveau Nez” Pétillant Originel AOC

“Nouveau Nez” is made with organically-farmed Chenin Blanc, typically with the first pick from Damien & Coralie Delecheneau's Chenin Blanc parcel. The grapes are hand-harvested ripe, hand sorted, whole cluster pressed, and fermented spontaneously with indigenous yeasts, with 9 months on lees. When sugar levels reach about 14g, the wine is bottled and aged a minimum of 18 months before being disgorged. No or minimal sulfur is added, depending on the vintage. The resulting wine contains less than 5g residual sugar and a minimum of 2.4 bars of pressure.
